Description
It has the particularity of retaining a very good natural acidity and therefore a low ph, while being able to reach incredible ripeness. Just what we’re looking for in our Burgundian white varieties. Here, it is vinified Burgundian-style in 25% new barrels from the Chassin cooperage and the remainder in barrels of several wines.
Direct pressing followed by racking after 24 hours of settling. Fermentation and aging in barrel for 10 months. A dry white wine with notes of jasmine, lemon and citrus.
